Shrimp with Spinach and Mashed Sweet Potato

This is a great dinner cooked in a lighter style, but you would never know it.

Serves 6

Ingredients

  • 2 Teaspoons Olive Oil

  • 2 Shallots, minced

  • 2 Cloves Garlic, minced

  • 4 Cups Baby Spinach

  • 2 Pounds Shrimp, peeled and deveined

  • Salt

  • Pepper

Method

Place the oil in a large saute pan. Use a paper towel to rub it around and soak up any excess.

Heat the pan. Add the shallot and garlic. Cook, stirring for a about a minute. Stir often, without oil, the shallot and garlic tend to dry and get brown. Add the roasted pepper. Add 1/4 cup of water. Cook until the mixture is pretty dry. Add the shrimp. Cook until the shrimp is pink all over. Add the spinach, cook to wilt the spinach. Season to taste with salt and pepper.

    The shrimp portion of this dish is delicious! It is a great light meal. As an alternative, I think that you could add curry powder – then you have two totally different tastes from one really easy recipe. My sweet potatoes were too starchy – do you think I overcooked the potatoes? The leeks added a great flavor to the potatoes. It may be worth it to add a tiny bit of fat……..

    I think these would be really good with a little butter or cream. If you want to keep them on the healthy side, maybe try one more leek.
