Roasting peppers is very easy. Place the pepper directly over the flame on the gas stove. Leave it there until the side is black, then turn it and repeat this process until the whole pepper is black. Remove the pepper and set aside until it is cool enough to handle. The skin will slip right off, rinse it under the water and remove the core and seeds.
