Creamy Leek Mashed Sweet Potato

These sweet potatoes are delicious and good for you. They feel like real mashed potatoes without the addition of cream or butter.
Serves 6
Ingredients

3 Sweet Potatoes, peeled and diced

4 Leeks, cleaned and chopped (use the white and light green part)

2 Teaspoons Salt
Method
Place the sweet potatoes in a pot of cold water. Bring to a boil. Reduce the heat and simmer for about 15 minutes, until the potatoes are fork tender. Drain the potatoes.
While the potatoes are cooking, Place the leeks in a pot with the salt and 1/4 cup water. Cover. Cook over medium heat for 20 minutes, check after 10 minutes, add a little more water if necessary. When the leeks are really soft, remove the lid and reduce all the liquid. Place the leeks in a blender or cuisinart. Blend until smooth.
Add the puree to the sweet potato and mash the two together. Season with salt and pepper.





These look delicious. They would be great with a steak!
